We love waffles in our home and these can be frozen and then reheated in the mornings for the children for a quick gluten free, dairy free breakfast. As a Holistic Health Coach managing my own autoimmune health, I focus on 'crowding out' inflammatory triggers. These waffles are a staple because they use Dairy-Free Milk, which is generally easier on the gut for those with high sensitivities. By using my specific flour blend, we avoid the cross-reactivity often found in processed gluten-free mixes.

Why This Works for Autoimmune Health

Functional Ingredient Highlights

People with autoimmune conditions often seek nutrient-dense foods to support gut repair.

  • Gluten-Free Flour Blends: Removing gluten reduces intestinal permeability ("leaky gut") and systemic inflammation, which are primary triggers for many autoimmune flare-ups.

  • Dairy-Free (Coconut or Nut Milks): Many people with autoimmune issues are cross-reactive to casein (the protein in dairy). Using coconut milk provides medium-chain triglycerides (MCTs), which are easier on the digestive system and provide a steady energy source.

  • Alternative Sweeteners: You can use maple syrup or honey; these are "lower-inflammatory" than refined white sugar and contain trace minerals like manganese and zinc.

The "Autoimmune Boost" Add-ons

Why not change the toppings or "mix-ins" that turn a treat into a healing meal?

  • Antioxidant Power: Top with fresh blueberries or raspberries to add polyphenols that fight oxidative stress.

  • Healthy Fats: Add a dollop of coconut yoghurt or a drizzle of almond butter to slow sugar absorption and help keep blood sugar stable.

  • Anti-Inflammatory Spice: Add a teaspoon of Cinnamon to the batter. It helps with blood sugar regulation and adds a warm, sweet flavour without extra sugar.

"Coach’s Tips" for Wellness

Here are my Tips for Wellness with this recipe.

  • Stable Energy: While these are 'Sweet' waffles, I recommend pairing them with a high-quality fat or protein for those of us with autoimmune conditions. Topping these with almond butter or a spoonful of coconut yoghurt helps slow down the absorption of the natural sugars, keeping your energy stable and preventing the 'mid-morning crash' that can trigger inflammation.

  • Mindful Eating: I love to enjoy these on a slow Saturday morning after a mindful walk in the Westwoods, or after walking up to the Cherhill White Horse. Stress management is just as important as diet for keeping the immune system calm.

  • Batch Cooking for Autoimmune Fatigue: On days when flare-ups make cooking difficult, having a 'safe' breakfast in the freezer is a lifesaver. These waffles hold their structure perfectly. To reheat, simply pop them in the toaster from frozen - it brings back that 'medium-high heat' crispiness without the effort of starting from scratch.

Prep Time:

5 minutes.

Cook Time:

Varies depends on your waffle maker!

Makes approximately 10 to 12 waffles

Ingredients:

260 g of my gluten free pancake / waffle mix (recipe below)

330 ml dairy free milk (I prefer to use rice milk)

1 to 2 tsp vanilla extract

2 eggs beaten


Instructions / Method:

Place all the ingredients in a bowl and stir until combined.

Preheat waffle iron to medium-high heat.

Spray with non-stick cooking oil.

Pour a heaping of batter onto each waffle square.

Close and cook until crispy. I find this takes around 4 minutes on my machine.

Repeat until all the waffle mixture is used up.

Serve immediately with a choice of topping.

If you are not eating immediately place it on a cooling rack and then freeze for later.


Additional Notes:

Remember to freeze the leftovers for an easy reach breakfast on school mornings.  They can freeze for up to 1 month in an airtight container.

Add spices such as pumpkin spice or cinnamon for a slightly different taste!

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
