Gut-Friendly Fats: I use Avocado Oil to ensure a moist crumb without the inflammation often associated with dairy or highly processed fats.
Simple Ingredients, Amazing Flavour
This recipe is easy to follow and requires only a few basic ingredients you likely already have in your larder. To make this cake, you will need: eggs, grated carrots, gluten-free flour, light brown sugar, white sugar, oil, baking soda, cinnamon, vanilla, and salt.

Prep Time:
15 minutes. The longest part is grating the carrots!
Cook Time:
45 minutes plus time to cool.
Ingredients:
4 eggs
4 cups of grated carrot
2 cups of our general all purpose gluten free flour
1 cup of light brown sugar
1 cup of white sugar
1 1/4 cups of oil (I use Avocado Oil)
2 tsp baking soda
1 1/2 tsp cinnamon
1 tsp vanilla
1 tsp salt
Instructions / Method:
Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4
Lightly grease or line 20 cm cake tin.
Place all the ingredients into a bowl and mix until combined.
Bake in the oven for 40 to 45 minutes until browned.
Leave for 5 minutes on the tray to cool and then carefully transfer them onto a cooling rack.
Additional Notes:
I love adding blueberries, dried fruit and nuts to this cake. Experiment and see what you like to add.
Gluten free flour changes vastly - I have used flours before in this cake that made the grated carrot float to the top of the cake! I use my own combination of flour in my recipes, but Dove Flour works well every time. See below for link to my recipe for my own combination of general all purpose gluten free flour.
