Baked Pastry
Baked pastry is not as successful as unbaked pastry dough to freeze.
Preparation
Make and bake in the usual way. Use foil dishes if possible. Brush inside of pastry dish with egg white if sweet and with melted butter if it is to be a savoury filling. Cool completely before freezing.
Packaging
Wrap pastry and dish in foil and then labelled and dated freezer bags.
Alternatively, open flash freeze until solid. Remove pastry or pie from dish then wrap in foil or bags.
Thawing
Leave in wrappings at room temperature for approximately 3 hours.
Remember to handle with care. The frozen baked pastry is very fragile. Refresh in the oven if it is to be served hot.
Storage Time
6 months
3 months if containing meat fillings.
