Potato (chipped, french fried)
This is how you freeze Potato (chipped, french fried).
Preparation
Once you have cut the potatoes into the size of chips you require you can either:
Deep fry them for 2 to 3 minutes, drain and cool, or,
Blanch the chips by bringing water (salt optional) to a boil. Add the potatoes and cook for 2 minutes. Complete this process in batches if required. Move blanched potatoes into iced water to stop the cooking process. Drain and pat dry.
Packaging
Pack in labelled and dated freezer bags or containers.
Thawing
Unwrap and thaw at room temperature. Pat dry. Fry or cook as normal fries.
